This recipe was created by my husband and me to have a healthy alternative to an Indian Takeaway. You can make it as spicy as you like by adjusting your curry powder amount or strength.

It is very tasty and goes well with chicken if you aren't vegetarian, and boiled rice too if like my husband you have a big appetite.

Serves: 4

(you can also make up a large batch to freeze for a quick meal at another date, just adjust the ingredients according)

Ingredients

1 Cup Red Lentils
Onions
3 Tomatoes
2 tsp Garlic
2 tsp Ginger
3 tsp Lemon Juice
2 tsp Salt
3 tsp Chilli Powder
Fresh Coriander

Method

  • Rinse the lentils until the water runs clear.
  • Then add 2 cups of water and simmer the lentils on a medium heat until soft, around 20mins. If it takes longer add a little bit more water and monitor until soft.
  • Whilst simmering, grate or finely chop the onions.
  • Place the onions in a wok and brown them off.
  • Finely chop and add the tomatoes to the onions.
  • Add crushed garlic
  • Add ginger
  • Once the lentils are cooked add the tomato mixture to them.
  • Add the salt, chilli powder and lemon juice to the mix and stir in well.
  • Simmer on a low heat until you are ready to eat
  • Stir in as much coriander as you like to suite your own taste
